I am participating in the Canadian Lentils Recipe Revelations Challenge, where you must create a unique lentil dish from scratch. The grand prize is $2000. I thought this would be a fun way to play with some lentil recipes and create something new. I absolutely love cooking and baking, can you tell?

There are a couple of different categories that you can enter in, so I decided to enter in three: salad, a baked good, and a main dish. Here is my first in the lentil series -- lentil salad.

This recipe is super quick and easy to make. Whats great is that you can make a large amount of salad and keep it in jars or containers in your fridge. That way, when you're feeling like you need a snack you can go for this delicious salad.

Did you know that lentils... lower cholesterol, create a healthy heart, are high in magnesium, high in dietary fibre, excellent source of protein, increase your energy, low in calories, and have relatively no fat. PLUS they are delicious!

cooking the lentils

  • 1 cup raw lentils
  • 2 cups water
  • 1 clove garlic
  • 1 tsp. basil
  • 1/2 tsp. olive oil
  • salt and pepper to taste

washing lentilsRinse the lentils under cold water in a strainer, and remove any unwanted bits or debris.

cooking lentilsAdd everything, except for salt and pepper, to a medium sized pot (lentils triple in volume so make sure you have a big enough pot). Set burner to a medium-high heat, stirring occasionally, then reduce to a low simmer. Once it starts to bubble lower it to create a nice simmer. Cook for around 20 minutes, or until the lentils are all soft. Strain any excess water, then add some salt and pepper.

  • 3 cups of cooked lentils
  • 4-6 sweet salad tomatoes - or equivalent diced
  • 1 cup minced fresh parsley
  • 1-2 Tbl. of chopped olives
  • 1 tsp. oregano
  • 1 tsp. dill
  • 1 tsp. chili powder
  • 1 tsp. olive oil
  • salt and pepper to taste

salad ingredientsMix all the ingredients in a big bowl, stir well, then add to mason jars (should last up to a week refrigerated), or serve right away.
